Beltane is the Celtic fertility festival and is traditionally celebrated on the night of May 1st. From salmon to cherry red: Fifty shades of rosé

The pale, light red coloring may belie this: Rosé is generally made from dark grapes. Not all rosé is the same: the colors range from salmon to cherry red. The color depends on how long the pressed juice lies on the mash – i.e. on the pressed berry skins. According to EU regulations, the term rosé is reserved for wines made exclusively from red wine grapes. One exception in Switzerland is “Schiller”, which is particularly well-known in the Graubünden Rhine Valley. White grapes may also be used in Schiller wine.

The magic question: How is rosé made?

In terms of production, a rosé is actually much closer to white wine than to red wine. It is significantly less enriched with anthocyanins (colorants), tannins and aromas than a red wine. Of course, the grape variety also has a major influence on taste and character. There are various production methods for rosé. In the most common method, the dark grapes are treated exactly as if they were white. On the way through the grape mill, the grape must is “stained” somewhat by the colorants in the grape skins, but unlike red wine, there is no maceration (no leaving on the skins). After pressing, the reddish must is then processed like a white wine. This produces very light-colored rosé wines.
