A special sparkling wine produced according to the old “Ancestral” method. Only one fermentation, first partly in the tank and then the rest in the bottle. It is then disgorged normally, without any additions. The bouquet is attractive and smells of fresh bread and citrus notes. Fresh on the palate with a subtle mousse. Very aromatic on the long finish, suitable as an aperitif with small snacks.

Voor Paardeberg
The Voor Paardeberg wine region lies northwest of Paarl at the foot of the eponymous Voor Paardeberg mountain range – a remote but up-and-coming origin within the Coastal Region. The microclimate here benefits from cool Atlantic breezes and strong temperature differences between day and night, allowing for a slow and balanced ripening of the grapes. The soils consist mainly of weathered granite, which gives the wines freshness, structure and minerality.
Although Voor Paardeberg is a relatively young wine region, it has already made a name for itself through sustainable viticulture, nature-oriented practices and the work of innovative winegrowers. White wines such as Chenin Blanc and Rhône-typical grape varieties such as Roussanne, Grenache Blanc and Viognier are particularly noteworthy here. Syrah, Grenache Noir and Mourvèdre also play an important role in the red wines – often pressed in an elegant, European-inspired style.

Vondeling
The Vondeling wine estate is located in the Paarl wine-growing region, on the slopes of the Paardeberg. The wine farm, which means “foundling”, was founded in 1704 by Oloff Bergh. This marked the beginning of a wine-growing tradition spanning around three centuries. Julian Johnsen acquired the historic vineyard in 2001. He replanted the vineyards and modernized the winery.
The soil consists mainly of weathered granite and some clay. The composition is therefore complex and varied. Today, Vondeling’s focus is on very environmentally conscious viticulture. However, oenology with minimal intervention in the natural processes is also a priority. For this reason, excellent character wines can be produced.

The White Blend Babiana is named after a rare species of fynbos. Like the winery, it is native to the Paardeberg. The wine always receives the highest accolades from wine tasters. The Red Blend Philosophy is one of the top wines. It is a rarity – a wine for special occasions.
Protecting the native flora
In January 2011, there was a fire on the Paardeberg. The Paardeberg Sustainability Initiative (PSI) has commissioned a botanical survey in collaboration with Vondeling Wines. The aim is to record all plant species growing on the mountain. For 18 months, the growth of the fynbos was documented through photographs and plant collections. To date, over 900 species in over 70 families have been collected. Around 10% of these species are endangered.
