This spirit used to be called grappa. In the meantime, “pomace” is used. After the grape juice has been fermented into wine and pressed, the grape marc is distilled. Bright yellow due to ageing in barriques. Smells very aromatic and at the same time mild, soft on the palate, aromatic and very fine. Very long lasting.

The traditional Paarl wine region is located around 60 kilometers north-east of Cape Town and is one of the oldest and most important wine-growing regions in South Africa. Surrounded by majestic granite mountains, after which the region is named (“Paarl” means “pearl”), the vineyards benefit from a Mediterranean climate with warm summers and cool nights as well as well-drained granite and slate soils.

Paarl stands for diversity: both red and white wines thrive here. The region is particularly well known for powerful red wines from Shiraz, Cabernet Sauvignon and Pinotage as well as elegant white wines from Chenin Blanc and Chardonnay. Many of the wines from Paarl are characterized by depth, structure and ageing potential.

In addition to large historic wine estates, smaller, innovative businesses have also established themselves in recent years, focusing on sustainable cultivation and terroir-driven wines. Paarl was also the seat of the former “Wine and Spirit Board” and played a central role in the development of the South African wine industry.

Wilderer

The Wilderer distillery is located in the Paarl region and has set itself the goal of becoming a leader in the production of Grappa & Eau de Vie. It has already been awarded over 100 international medals.

In 1994, German restaurateur Helmut Wilderer traveled to South Africa. To his surprise, he discovered in a restaurant that no local grappas or eau de vie were available – anywhere in the country. This was because the production of these spirits had been banned during the apartheid era. However, as South Africa became a democracy, this law was repealed. Helmut took advantage of this moment of change and applied for the first private distilling license. He soon received approval and decided to move to the Cape at the end of the year. In 1995, he founded the first private distillery in South Africa.
