Darling
Together with the districts of Cape Town, Franschhoek, Paarl, Stellenbosch, Swartland, Tulbagh and Wellington, Darling is part of South Africa’s Coastal Region wine region. The district has been independent since 2003, before that it belonged to Swartland.
The wine region benefits from the cool Atlantic breezes. These breezes have a positive influence on the cultivation of sensitive grape varieties. But the granite and clay soils also ensure a fertile terroir. For this reason, the district is famous for its fruity Sauvignon Blanc and red wines.

At Savinis you will find the best producers from Darling such as Ormonde or Withington.

Withington
With a great deal of passion and decades of experience, David Withington founded his own boutique winery in the coastal region of Darling – an up-and-coming wine region on South Africa’s west coast. After working as a cellar master at renowned houses such as Nederburg and Boschendal, Withington is now fully dedicated to the artisanal production of small-batch wines full of character.
The focus is on grape varieties such as Shiraz, Pinotage and Chenin Blanc, which ripen particularly aromatically due to the cooling influences from the nearby Atlantic Ocean and the clay and limestone soils. The grapes are carefully harvested by hand and vinified with great sensitivity, combining traditional methods with modern cellar technology.

Withington Wines stands for authenticity, elegance and origin. Each wine reflects the special characteristics of the terroir in Darling – shaped by wind, sun and decades of winemaking tradition. Particularly popular are the limited reserve wines, which are matured in French barriques and are characterized by depth, structure and longevity.
